Creaming (Honey Stirring)
Creaming is the controlled stirring of honey during crystallization to achieve a uniformly smooth, spreadable consistency. The honey is stirred regularly over several days, breaking down large crystals into fine ones. The optimal time to begin stirring is when the honey first starts to turn cloudy.
