Invertase
Invertase is an enzyme that bees add to nectar in their honey stomach. It splits sucrose into the simple sugars glucose and fructose. Invertase activity is a quality indicator for unprocessed honey and is destroyed by heating. The invertase number is measured in Siegenthaler units.
