Seed Crystals

Seed crystals are fine honey crystals from already creamed honey used as a starter for the creaming process. They transfer their fine crystal structure to liquid honey and control crystallization. About 5-10% of seed honey is mixed into the fresh honey to initiate uniform fine crystallization.
