Crystallization

Crystallization is the natural process by which liquid honey solidifies. It is determined by the glucose-to-fructose ratio: glucose-rich honeys like rapeseed crystallize quickly, while fructose-rich honeys like acacia remain liquid longer. Crystallization is a quality indicator, not a sign of poor honey.
